Le printemps a pos\u00e9 ses valises sur les hauteurs de Faug\u00e8res, et avec lui, l\u2019envie irr\u00e9sistible de remettre les mains dans la terre.<\/div>
Ces derni\u00e8res semaines, on a plant\u00e9 au jardin de L\u2019Oustaloise ce qui nourrira la table d\u2019h\u00f4tes tout au long de la belle saison. Tomates, courgettes, aubergines, poivrons, herbes aromatiques\u2026 Des vari\u00e9t\u00e9s choisies avec soin, cultiv\u00e9es sans pr\u00e9cipitation, \u00e0 quelques pas seulement de la cuisine.<\/div>
C\u2019est une des convictions profondes qui guide notre table : cuisiner ce que l\u2019on a soi-m\u00eame plant\u00e9, cueilli le matin pour le servir le soir et pas que. Pas d\u2019interm\u00e9diaire, pas de compromis. Juste le plaisir d\u2019une assiette qui raconte quelque chose \u2014 le soleil de l\u2019H\u00e9rault, le schiste de nos vignes, l\u2019air vif de la garrigue.<\/div>
Ici, le jardin n\u2019est pas d\u00e9coratif. Il est au c\u0153ur de ce que nous sommes. Il dicte les menus, inspire les associations, impose son rythme. Et c\u2019est tant mieux.<\/div>
Les premi\u00e8res pousses pointent d\u00e9j\u00e0. Dans quelques semaines, les courgettes fleuriront, les tomates commenceront \u00e0 rougir, et les herbes parfumeront la terrasse d\u00e8s le matin. Tout cela finira dans vos assiettes, lors de nos soir\u00e9es en table d\u2019h\u00f4tes, autour d\u2019un verre de vin de Faug\u00e8res.<\/div>
